Position Overview The Executive Chef at The Quoin Hotel is responsible for shaping and executing the culinary vision across all outlets, driving both creative excellence and strong financial performance. This role requires a dynamic leader with refined taste, operational discipline, and proven event expertise — someone who understands how to balance artistry with profitability in a boutique luxury environment.

Key Responsibilities

Culinary Leadership

  • Lead, mentor, and develop a high-performing culinary team
  • Oversee menu creation, seasonal transitions, and concept evolution across all outlets
  • Maintain consistent quality, presentation, and guest satisfaction

Financial Acumen & Operational Strategy

  • Full ownership of culinary P&L performance
  • Drive food cost control, labor management, and inventory optimization
  • Implement menu engineering strategies to maximize margin
  • Forecast revenue and collaborate with hotel leadership on budgeting and strategic planning

Event & Banquet Expertise

  • Design scalable, profitable menus for weddings, social events, and corporate functions
  • Partner closely with sales and events teams to grow revenue
  • Oversee flawless execution of high-touch, boutique events

Brand & Experience Alignment

  • Ensure all culinary offerings reflect Method Co.’s design-forward, experiential philosophy
  • Collaborate with marketing and leadership teams on activations, chef dinners, and special programming
  • Contribute to the continued evolution of The Quoin’s culinary reputation in the Wilmington market

Qualifications

  • 5+ years in a senior culinary leadership role within luxury hotels or high-end restaurants
  • Experience overseeing multiple outlets with distinct concepts
  • Strong financial literacy (P&L ownership, forecasting, cost controls)
  • Extensive banquet and private event experience
  • Polished leadership style with a hands-on approach
  • Ability to thrive in a boutique, high-touch hospitality environment
